KABO was built on a simple conviction — that the depth and soul of real Indian regional cooking shouldn't require hours in the kitchen or a culinary degree to achieve.
I'd know — I spent more than 18 years earning mine the hard way. I trained as a chef, cooked my way around the world in cruise ship kitchens, and ran restaurants in the US for over eight years. Closer to home, I ran Kochi Cafe in Melbourne for three years, serving South Indian specialities from the region I know best. And everywhere, I watched the same thing: people who love Indian food reaching for supermarket jars — not because they wanted to, but because the real thing felt out of reach. Too many ingredients. Too much prep. Too much that could go wrong.
KABO is my answer. Every KABO Indian spice blend is built on the principles that define great regional Indian cooking — proper spice layering, authentic flavour profiles from Kerala, Maharashtra, Tamil Nadu and beyond, and absolutely nothing artificial.
